Will anyone share their recipe for mustard sauce to go with ham?

My ex-husband’s cousin used to make a mustard sauce with lots of sugar to serve with his mother’s ham. It was spicy and sweet and oh-so-good. I don’t remember egg being in his and all the recipes I find have eggs which sounds too rich. I’d prefer to use dry mustard rather than prepared mustard. I’d like to make some for my Easter ham. Thanks for any suggestions!

    Here is the way I’d do it

    In a pot, pout some double cream, or heavy cream or crème fresh, salt, pepper, sugar and the mustard. Cook on low heat, at no point the cream should boil, or it will turn sour.

    Mustard Sauce
    Ingredients:

    2 egg yolks
    1 tablespoon mustard
    1 tablespoon vinegar
    1 cup skim milk
    Tarragon, basil, parsley, or chives to taste
    Salt and pepper to taste
    Preparation:
    1 – Mix all ingredients; stir in a double boiler (about 5 minutes), let cool.
    2 – Serve this sauce as a substitute for mayonnaise or as an herb sauce by adding different herbs.

    Yield:
    4 servings

    Nutritional Information:
    Per serving: 52.5 Calories, 3.5 protein, 3.4 g carbohydrate, 2.3 fat, 0.7 mg vitamin C, 89 mg calcium. Calories from fat: 39%.

    INGREDIENTS

    * 1 tablespoon all-purpose flour
    * 3/4 cup white sugar
    * 1 tablespoon mustard powder
    * 1 cup milk
    * 2 egg yolks
    * 1/2 cup tarragon vinegar

    DIRECTIONS

    1. In a small bowl, mix together the flour, sugar and mustard powder until evenly blended. Whisk together the milk and egg yolks in a saucepan, and slowly whisk in the mustard mixture. Stir in the vinegar. Whisking constantly, bring the mixture to a boil over medium heat, reduce heat to low, and simmer until thickened.

    The egg is Very important to this sauce…………..and his prolly did have it in there………Have fun and happy Easter

    Place one can of dried mustard into a bowl, add mayonnaise until the consistency is how you like it. Very spicy! Add sugar to tame to your taste.
