Red, White and Blue Chicken Salad

Yields: 4 to 6 servings Ingredients: 1 cup sliced strawberries 1 cup blueberries 2 cups chicken, cooked and chopped ½ cup macadamia nuts, toasted and chopped ¼ cup canola oil ¼ cup orange juice concentrate 2 tbsp. spicy brown mustard 1 tsp. poppy seeds ¼ tsp. salt Preparation Directions: ~ In a large bowl combine strawberries, blueberries, chicken, and macadamia nuts; set aside. ~ Whisk together oil, orange juice concentrate, mustard, poppy seeds and salt until well blended. ~ Pour over chicken mixture and gently toss to coat.
