Spicy brown mustards use a coarse ground mustard seed, no turmeric (which gives CYM it&#039;s bright yellow color), and often incorporate horseradish for added heat.  CYM is made with fine ground mustard seeds (mustard powder, or flour), salt, vinegar and various spices and flavorings.
