    Very good idea. Especially to stay away from the bread crumbs. I love to cook and cant wait to come up with different healthy ways to make the foods I love.

    I am going to make that today, I love chicken cordon bleu but hate the hassle. You and have very similar personalities and similar cooking techniques as well, too bad we didn’t live closer. Of course I’m a mother too (of 3 girls)I’m snowed in today as well, got 7-10 inches of snow last night!! Yikes!! Kelly

    OH.. also – another tip. If anyone has a convection oven, I have found that they keep chicken and turkey REALLY moist too. I’m definitely going to try this in there. :)
